Resistant Starch: Misunderstood and Mis-promoted

Men’s Health advises its readers to eat vegetables with resistant starch because it is a good dieting aid. Unfortunately, the recipe that they give neglects to mention the important fact that, for potatoes, it is essential that the vegetable should be cooled in order for the resistant starch to form as heating destroys the crystals.
